Place a thick layer of spinach in the bottom of the pie pan.
Blend up all ingredients in your food processor. You can hand chop them as well.
Fill up the pie pan with the mix and mash it down to to help strain the water.
Mix together the cheeses and mayonnaise til its creamy. And paste it on the top of the pie.
Tilt and pour out excess water. It help to hold down the pie with saran wrap or something flat. Alternatively if you have the time you can strain your tomatoes before mixing.
Cook for 45 minutes on 425. Let cool for 5 minutes and enjoy.
This is my psudeo healthy tomato pie but can be improved by replacing the cheese and mayo. I've been experimenting with a non cheese non mayo version and will post it when it ready. In the meantime this makes for a great non meat veggie pizza alternative.
